The two calculation methods
- Weighted average unit cost (default): a day's cost is the average cost of its services, weighted by their headcounts.
- Total Cost of Services: a day's cost is the sum of the costs of its services (for example lunch + dinner). A week's cost is the simple average of the days concerned; closed days are not counted.
Example: lunch at €2.00 for 100 guests and dinner at €3.00 for 50 guests. With the weighted average unit cost, the day costs (2.00 × 100 + 3.00 × 50) / 150 = €2.33. With the total cost of services, it costs 2.00 + 3.00 = €5.00.
Choose the calculation method
Start from: Your name > Site parameters > My budgets
- In Choose a date, select the date from which the method applies.
- Under Method for Calculating the Cost, select Weighted average unit cost or Total Cost of Services.
Where the method applies
- In the Menus screen, to the day and week costs. With Total Cost of Services, the tooltip also shows the weighted average unit cost. Users whose profile can't read the site parameters see the default method.
- In the performance indicators window, to the unit cost price. For more information, see Using business metrics on menu templates.
- The menu financial reports (by category and by site) also give the total cost of services.
Nothing changes for sites that keep the default method. To set the site's target cost, see Change the target food cost.
